Recipe: Chicken + Veggie Stir Fry or Hash

I love any dish that couples as more than one thang. As the title suggests, you can easily whip this up to be a tasty dinner dish by itself or you can throw it on the side of your breakfast plate with some eggs and call it a hearty meal. However you decide to indulge in this dish, I hope you thoroughly enjoy it! This recipe was originally brought to my attention via Real Plans and I believe it is an original recipe of theirs for their subscribers. I adapted it to the following recipe:

Serving Size for 2 or 1 + leftovers

Ingredients

••1/2 bag of riced cauliflower (Trader Joes carries this)
••a few garlic cloves, chopped
••1 onion
••small handful baby kale (found at Trader Joes) or just regular
••small handful green onions
••1 tbsp coconut oil
••coarse sea salt, as needed 
••ground black pepper, as needed 
••3-6 slices bacon, depending on your liking
••2 eggs, preferably local and pasture raised
••1 tablespoon fish sauce, really makes a difference in flavor
••1/2+ tbsp toasted sesame oil
••coconut aminos (optional)

The Procedure

1. Heat pan over medium heat.
​2. Mince garlic. Finely dice onion.
3. 
Heat coconut oil in a skillet over medium heat.
4. Sauté garlic for 1-2 minutes, then add onion. Looking for translucent color / caramelization in the onions. 
5. Add in cauliflower rice and sauté for an additional 4–5 minutes
6. Chop green onions, leave extra for garnish
​7. ​Get out kale, de-stem if needed, and cut into tiny pieces.
8. Cook bacon slices in a second large frying pan over medium heat.
9. Season first pan with salt and pepper, to taste
10. While bacon is cooking, use a wire whisk to beat the eggs with fish sauce and toasted sesame oil in a bowl.
12. To the first pan, add chopped kale, most of the green onions, and cook until wilted.
13. Once bacon is cooked, shut off heat, set aside, and let cool. If you have a good quality meat, don't worry about draining that fat! Keep it in the dish or set aside for later use.
14. Once cooled, cut the bacon into little bits at your own size preference and add to the first dish.
15. Now add the fish sauce + sesame sauce combo to get that flavor in.
16. Pour beaten eggs over the whole mixture and cook until the eggs just begin to firm up. Use your spatula to help break up any clumps that start to form. 
​17. To finish the dish, top with extra green onions, season with salt and pepper, and maybe add a touch of coconut aminos for extra flavor + a soy sauce alternative.

TIPS

Switch the bacon out for your meat of choice - I love using chicken or Italian sausage. You can also consider making it without eggs. Remember, this is your dish now, feel free to make any changes you like!
