Official Week 1 Whole30 - My Meal Plan

Seriously I just cannot rave enough about how amazing it has felt to get on top of my diet again this week!! To go from hating to even think about being hungry to loving being in the kitchen again is sooo refreshing! Here's what I cooked up this past week:

Classic Breakfast err'day:
-Sweet potato hash with grilled onions, garlic, & misc. veggies, local meat of some kind, this week was ground pork patties with salt & pepper, & 2 fried eggs on top

Lunches mostly consisted of an on-the-fly Chicken Salad that I threw together & kept in the fridge. A tasty mix of organic tahini, raisins, natural canned chicken, lemon juice, chopped macadamia nuts, salt, & pepper, placed atop a nice bed of greens & then slathered with my new obsession: artichoke antipasto  - also from #TraderJoes!

Dinners varied. 2 nights I had [local] pork chops seasoned with salt/pepper, garlic, & onions, then baked in the oven. 2 other nights I baked chicken thighs with dijon, balsamic, s/p, garlic, onion, & leeks. I almost always throw my meat over a steamed sweet potato (I cook a handful off in my pressure cooker to have on hand all week) & then saute up some random veggies in the pan with ghee, salt & pepper. -Seriously you can't go wrong with ghee, salt, pepper, onion, & garlic. When I was helping my boyfriend become comfortable with cooking I told him, "just always add these."

For snacks I kept on hand a bag of dry roasted & salted macadamia nuts, a handful of #Whole30 compliant Larabars (apple pie, cherry pie, & cashew cookie) & bananas.

This honestly kept me going this week ,but as it's nearing the end of the week, I feel like my metabolism is already starting to boost up again. I think I'm going to need more food next week 
 I went to the grocery store & picked up some goods. My biggest challenge is always trying to find a new variety of seasoning!! Will you please share with me your favorite seasonings or marinades?!?
