Today, I am excited to introduce you to a fellow NTP tribe member of mine and her tasty as all get out FIVE INGREDIENT chicken soup. I've recently asked my community for contribution to my blog as I have venture  out to the opposite side of the world. When I put out that call, Andrea answered. I am especially excited to have Andrea as a guest blogger today, as she specializes in something I am becoming increasingly fascinated with: keto-adaptation! ​Andrea J. Walker NTP, RWP is a Nutritional Therapy Practitioner and Restorative Wellness Practitioner based in Seattle, Washington and the owner of Nourish Strength. 

She specializes in helping clients find and address the root causes of imbalance and feel better than they ever have, through midlife and beyond. She is passionate about supporting her clients to better health so they can fully express their creativity in the world.

She also specializes in ketogenic diets and coaches both individuals and groups in person and online on the nuts and bolts of keto-adaptation. She lives in Seattle with her husband, two daughters ages 7 and 10, and two cats. When she’s not helping clients or spending time with her family you can find her Crossfitting, skiing, playing piano, or Instagramming.



​I absolutely love having a steady supply of chicken soup in my fridge all winter long, and I want it to be a version that fits my keto lifestyle- no noodles, potatoes, or wild rice over here, please. I also have a lot of demands on my time- family, work, self-care, etc. So the soup I make most often is my ‘lazy’ version- I love it and I think you will too. All you need is an Instantpot, some carrots, some celery, a small head of green cabbage, an onion or two, and a high quality cooked chicken. I am very lucky to have multiple sources of high quality cooked chickens here in Seattle, and I choose often to purchase mine from PCC, a wonderland of the highest quality foods available. ​

Ingredients

High quality cooked chicken
Bunch of celery
2-3 small onions or 1-2 large ones
Head of green cabbage
​ 2-3 carrots

Procedure

First things first- probably the messiest part but super easy. Wash your hands and then get in there and take that meat off of the chicken. Put it in a glass container and store in the fridge while you continue on. Place everything else from the chicken into the Instantpot.

Add a couple stalks of celery cut in half, two small onions cut in half, a carrot peeled and cut in half, and enough good filtered water to fill the Instantpot up about 2/3 of the way. Turn on using the bean setting and then adjust upward manually using the plus button until you get anywhere from 60-90 (it’s all good, longer is better if you have the time.)

While the Instantpot is going, dice up an onion, 2-3 more stalks of celery, and another carrot and saute in olive oil or butter in a soup pot on the stove.

Allow the Instantpot to cool down for a good chunk of time after the timer beeps. Let the pressure dissipate naturally before you try to open it.

Voila! You’ve just created chicken bone broth. (Stop here if you just want a supply of chicken bone broth to sip on! Store in Mason jars in the fridge. For soup, keep going.)

Place a strainer/colander on top of the soup pot. Pour the liquid from the Instantpot through the colander into the pot, careful not to splash any hot liquid on yourself.

Allow to come to a simmer and then add about half a head of cabbage, either diced or sliced thin to create “noodles”.  Simmer for just a few minutes until soft.

Add the reserved chicken meat, shredding while you add to the pot. Heat until warm through. Taste and salt and pepper as needed. You will need a good amount of a nice whole sea salt.

Serve in a bowl with a dollop of butter or ghee if desired. So delicious and nourishing! I like to keep a container of this on hand at all times. I serve it with ham and cheese rollups n lettuce; guacamole with salami and cucumber slices; or egg salad on small raw cabbage leaves. Delicious soup and salad!!
